And the best thing about using a cast iron pan, or reversible grill/griddle, is that you don`t have to wait for the coals to heat up.
Other factors to consider when choosing replacement ovenware accessories are quality and durability. While some pieces may be replaced often, those that are meant to last should be looked at like a minor investment. Not that you have to spend a fortune, but you want good materials. You can find a replacement grill pan made of enamelled cold rolled steel designed to last for many years. These kinds of cookware pieces that will be used long-time should have strength and durability.
Experts said that cast iron grill pans are wonderful for anything you wish to cook at a very high heat. Particularly in a well-seasoned pan, as all you have to do is put it on a high flame for a couple of minutes and let it become blazing hot, without adding fat or oil to the pan. Be careful as bringing a cast iron to blazing hot makes it hot all over including the handle.
A second factor for selecting the right food is that it should be low in fat. Grilling fatty pieces of meat on an outdoor grill is easily managed and the smoke that is generated from the fat dripping onto the charcoal adds a great depth of flavor. However, grilling that same fatty piece of meat on a grill pan will simply fill your kitchen up with thick smoke. Staying with the example of steak, when grilling indoors it is preferable to cook a lean steak such as a New York strip over a more fatty cut such as a ribeye.
The way to clean a grill depends on whether it uses charcoal or gas. But generally, you can place the cooking grates in a pan of hot, soapy water and degrease with a dish detergent. Scrub the cooking surfaces with a plastic brush or scouring pad. For deeply-embedded dirt, sprinkling it with baking soda before scrubbing can be helpful. Rinse well and let dry. After the grill has dried, wipe the cooking grates with oil. This acts as a stabilizer and will help keep food from sticking.
